Broth
Ingredients:

2 tbsp extra virgin olive oil
·
1 large onion
·
3 carrots
·
3 stalks celery
·
6 button mushrooms

2 cups fresh spinach or kale
·
3 bay leaves
·
1 tsp dried thyme
·
1 tsp black peppercorns
·
1 tsp sea salt
·
8 cups cold water
Directions:
- Cut onion, celery stalks and carrots into 1 inch pieces
- Add oil into multi-pot and let it warm for 2 minutes
- Saute onions, celery, carrots and greens with bay leaves and salt pepper and herbs for about 8 minutes until onions are translucent
- Set multi-pot on manual for 30 minutes and natural release
- Drain into pot using colander and remove the cooked vegetables
- Pour into storage vessels (preferably quart sized Mason Jars)
