Vegetable Broth

Vegetable Broth

 

Ingredients:

 

·        2 tbsp extra virgin olive oil

·        1 large onion

·        3 carrots

·        3 stalks celery

·        6 button mushrooms  [omitted]

·        2 cups fresh spinach or kale

·        3 bay leaves

·        1 tsp dried thyme

·        1 tsp black peppercorns

·        1 tsp sea salt

·        8 cups cold water

 

Directions:

  1. Cut onion, celery stalks and carrots into 1 inch pieces 
  2. Add oil into multi-pot and let it warm for 2 minutes 
  3.  Saute onions, celery, carrots and greens with bay leaves and salt pepper and herbs for about 8 minutes until onions are translucent
  4. Set multi-pot on manual for 30 minutes and natural release
  5. Drain into pot using colander and remove the cooked vegetables
  6. Pour into storage vessels  (preferably quart sized Mason Jars)
